Paleo Pumpkin Breakfast Cookies

So my first thought when I decided to go Paleo was, “what can I have for breakfast that’s fast when I’m on the go?”  and I had searched and searched Pinterest for recipes that I could make in batches & there were some links that were just failed links until I found them on The Girl Who Went Paleo blog site.

Now these breakfast cookies can be made in large batches and you can keep them stored inside the fridge in a container. So whenever you’re on the run in the morning, or even for a quick snack – you can just pop one of these into the microwave for 10-15 seconds & voila!  A healthy breakfast/snack to hold you over until your next meal!

Now anytime I make these Breakfast Cookies, I either need to make a ton or I need to make them quick & hide them before my husband finds them. He treats them like potato chips & doesn’t stop at 1, heck – I’d be lucky to even get a crumb if he finds them first. They are just so sinfully good! You’ll be surprised that they are even paleo!

Paleo Pumpkin Breakfast Cookies

1/2 C almond butter ( or whatever nut butter you choose) I like Justin’s Vanilla Almond Butter
1/2 C honey ( I like to use local organic honey,  local honey gives you the best benefits)
1/4 C pumpkin puree
1 tsp vanilla extract
1 C almond meal/flour
1/4 tsp baking soda
1/2 C dark chocolate chips or dried fruit
1/2 C chopped pecans, walnuts, whatever you prefer (optional)

Preheat your oven to 350°
In a mixing bowl add in all your wet ingredients & stir together. Make sure everything is well blended.
Next, add in all your dry ingredients.  Mix together.

Note: this part can get a little messy, so prepare yourself.
On a foil lined baking sheet, spray with coconut oil & begin spooning on your cookie mix. I like to use a table spoon and I just drop them onto the baking sheet, no need to spread it out – it will expand on its own in the oven.
With following the recipe you should be able to make 10-12 large cookies.
Bake for 10-15 minutes depending on the thickness. When done let it set for another 15 minutes. Afterwards you can place them inside a container & store them in the fridge for whenever your on the run or needing an afternoon pick me up!
